Ingredients
  

Tart Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Cream Filling
  • 1 cup heavy cream chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
Berry Topping
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1 tablespoon honey optional

Method
 

Prepare the Tart Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Add the cold butter and mix until crumbly.
  2. Add the egg yolk and ice water, mixing until the dough forms. Press the dough into a tart pan and prick the bottom with a fork.
  3. Bake for 20-25 minutes or until golden. Let cool completely.
Make the Cream Filling
  1. In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  2. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Assemble the Tart
  1. Spread the cream filling evenly over the cooled tart crust.
  2. Top with mixed berries and drizzle with honey if desired. Chill in the refrigerator for at least 1 hour before serving.
