White Chicken Enchiladas

Ingredients
  

For the Enchiladas
  • 2 cups Cooked Chicken, shredded
  • 1 cup Cream Cheese, softened
  • 1 cup Sour Cream
  • 1 cup Shredded Cheese Cheddar or Monterey Jack
  • 8 Flour Tortillas
  • 1 cup Green Chiles, diced
For the White Sauce
  • 2 tablespoons Butter
  • 2 tablespoons All-Purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Sour Cream
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the shredded chicken, cream cheese, sour cream, green chiles, and half of the shredded cheese. Mix well.
Make the White Sauce
  1. In a skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  2. Gradually whisk in the chicken broth, stirring constantly until the sauce thickens.
  3. Remove from heat and stir in the sour cream, garlic powder, onion powder, salt, and pepper.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread a small amount of the white sauce in the bottom of a baking dish.
  3. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in the baking dish.
  4. Pour the remaining white sauce over the enchiladas and sprinkle with the remaining shredded cheese.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  2. Let cool for a few minutes before serving.
