Ingredients
  

Base Ingredients
  • 4 cups Watermelon Seedless, cubed
  • 1 cup Tomatoes Chopped
  • 1 cucumber Cucumber Peeled and chopped
  • 1 small Red Onion Chopped
  • 1 clove Garlic Minced
Seasoning
  • 2 tablespoons Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper Freshly ground, to taste
Garnish
  • 1/4 cup Fresh Basil Chopped
  • 1/4 cup Feta Cheese Crumbled, optional

Method
 

Preparation
  1. In a blender, combine the watermelon, tomatoes, cucumber, red onion, and garlic. Blend until smooth.
  2. Add the olive oil, red wine vinegar, salt, and black pepper. Blend again until well combined.
  3. Taste and adjust seasoning if necessary.
Serving
  1. Chill the gazpacho in the refrigerator for at least 30 minutes before serving.
  2. Serve in bowls and garnish with fresh basil and feta cheese if desired.
