Ingredients
  

Watermelon Layer
  • 1 large watermelon seedless
Frosting
  • 2 cups heavy whipping cream chilled
  • 1 cup powdered sugar adjust to taste
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup fresh berries strawberries, blueberries, or raspberries
  • 1 cup mint leaves for garnish

Method
 

Prepare Watermelon
  1. Cut the watermelon into thick slices, about 2 inches each, and remove the rind.
Make Frosting
  1. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
Assemble Cake
  1. Place one slice of watermelon on a cake stand. Spread a layer of whipped cream on top. Repeat with remaining slices, finishing with whipped cream on top.
Garnish
  1. Top the cake with fresh berries and mint leaves for decoration.
