Preparation & Assembly
- Preheat oven to 375°F (190°C). Generously grease a 24-cup mini muffin tin with non-stick baking spray.
- On a lightly floured surface, roll thawed puff pastry sheet gently into a 10x15-inch rectangle. Cut into 24 even squares using a pizza cutter or sharp knife.
- Gently press each pastry square into a mini muffin cup, allowing corners to flare outward.
- Place one cube of chilled brie in the center of each pastry square.
- Spoon 1 rounded teaspoon of whole cranberry sauce on top of each brie cube, then sprinkle with finely chopped pecans.
Baking & Finishing
- Bake at 375°F (190°C) for 14-16 minutes until puff pastry edges are puffed and deep golden brown, and cheese is bubbling.
- Let rest in the tin for 4-5 minutes so the cheese slightly sets.
- Drizzle with warm honey and sprinkle with fresh minced rosemary. Lift out with a small spatula and arrange on a serving board warm.
