Ingredients
  

  • 2 large portobello mushrooms (about 300g)
  • 3 cloves garlic minced
  • 1 cup rolled oats
  • 1 cup canned chickpeas rinsed and drained
  • 2 tbsp soy sauce (low-sodium recommended)
  • Salt to taste
  • Pepper to taste
  • Olive oil for cooking

Method
 

  1. Clean portobello mushrooms by wiping them with a damp cloth.
  2. In a skillet over medium heat, sauté minced garlic and chopped mushrooms in olive oil until tender (about 5 minutes).
  3. Transfer the mixture to a food processor; add rolled oats, chickpeas, soy sauce, salt, and pepper. Pulse until combined but chunky.
  4. Form the mixture into four patties (about 3 inches wide).
  5. In the skillet, cook each patty over medium heat for approximately 5 minutes on each side until golden brown.
  6. Assemble your burger with toasted buns and desired toppings.
