Ingredients
  

  • 8 oz high-quality dark chocolate (60% cocoa)
  • ½ cup heavy cream
  • ¼ cup unsweetened cocoa powder for coating
  • ¼ cup colorful sprinkles for coating
  • 1 tsp vanilla extract

Method
 

  1. Chop the dark chocolate and place it in a heatproof bowl.
  2. Heat the heavy cream in a saucepan until simmering, then pour over the chocolate and let sit for 2 minutes before stirring until smooth.
  3. Mix in the vanilla extract to the ganache.
  4. Refrigerate the ganache for about 2 hours until firm enough to scoop.
  5. Use a melon baller or small cookie scoop to form bite-sized balls and roll them smooth between your palms.
  6. Coat each truffle in either cocoa powder or sprinkles.
  7. Serve on a decorative plate and enjoy!
