Ingredients
  

Dip Cream & Cheese Base
  • 8 oz brick cream cheese, softened to room temperature
  • 1/2 cup sour cream (or whole-milk Greek yogurt)
  • 4 cloves fresh garlic, finely minced
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp crushed red pepper flakes (optional for gentle heat)
  • 1/2 tsp kosher salt
Vegetables & Melting Cheeses
  • 10 oz frozen chopped spinach, thawed and squeezed completely dry
  • 14 oz can quartered artichoke hearts in water, drained, patted dry, and coarsely chopped
  • 3/4 cup freshly grated Parmigiano-Reggiano or parmesan cheese
  • 1 1/2 cups shredded whole-milk mozzarella cheese, divided (1 cup for mixture, 1/2 cup for topping)
  • 1 tbsp fresh flat-leaf parsley, finely chopped for garnish

Method
 

Prep & Blend
  1. Preheat oven to 375°F (190°C). Lightly grease an 8-inch or 9-inch baking dish or 10-inch cast iron skillet with cooking spray.
  2. Wring the thawed chopped spinach in a clean kitchen towel until bone-dry. Coarsely chop drained artichoke hearts into bite-sized pieces.
  3. In a large mixing bowl, beat softened cream cheese, sour cream, minced garlic, kosher salt, black pepper, and crushed red pepper flakes until smooth and creamy.
Fold, Top & Bake
  1. Fold in wrung-dry spinach, chopped artichokes, grated parmesan, and 1 cup of shredded mozzarella until evenly blended.
  2. Spread the mixture into the prepared baking dish in an even layer. Scatter the remaining 1/2 cup mozzarella over the top.
  3. Bake at 375°F (190°C) for 18-20 minutes until hot and bubbling. Switch oven to broil on HIGH for 2-3 minutes until the cheese crust is golden brown and blistered.
  4. Let rest 5 minutes, garnish with fresh parsley, and serve warm with pita chips, crostini, and vegetables.
