  • 2 cups tomatoes, diced Canned or fresh
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cajun seasoning Adjust to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth Low sodium recommended

Method
 

Cooking Steps
  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add sliced okra and cook for about 5 minutes, stirring occasionally.
  4. Add diced tomatoes, chicken broth, and cajun seasoning. Bring to a simmer.
  5. Cook for 10 minutes, allowing the flavors to meld.
  6. Add the shrimp and cook until they turn pink and opaque, about 5-7 minutes.
  7. Season with salt and pepper to taste. Serve hot.
