  • 1 pound shrimp, peeled and deveined preferably large shrimp
  • 2 cups okra, sliced fresh or frozen
  • 1 can diced tomatoes 14.5 oz can
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cajun seasoning or to taste
  • 1 tablespoon olive oil
  • 1 cup chicken broth

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the sliced okra and cook for about 5 minutes, stirring occasionally.
  4. Add the diced tomatoes (with juices), chicken broth, and cajun seasoning. Bring to a simmer.
  5. Reduce heat to low and let simmer for 10 minutes to allow flavors to meld.
  6. Add the shrimp to the skillet, season with salt and black pepper, and cook until shrimp are pink and opaque, about 5-7 minutes.
  7. Remove from heat and serve hot, optionally over rice or with crusty bread.
