Ingredients
  

  • 2 fillets fresh salmon about 6 oz each
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 2 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat.
  2. Cook the salmon skin-side down for about 4-5 minutes until golden brown; flip and cook for another 3-4 minutes until fully cooked. Remove from heat and let cool before flaking into pieces.
  3. In a large bowl, combine diced avocados, cherry tomatoes, cucumber, and red onion.
  4. Whisk together lemon juice and olive oil in a small bowl; season with salt and pepper.
  5. Toss the veggies with the dressing; gently fold in the flaked salmon.
  6. Serve immediately or chill before serving for enhanced flavors.
