Ingredients
  

Base Ingredients
  • 1 cup shredded coconut unsweetened
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup for vegan option
  • 1/2 cup fresh raspberries mashed
  • 1/2 teaspoon vanilla extract
Coating
  • 1/4 cup shredded coconut for rolling

Method
 

Preparation
  1. In a mixing bowl, combine shredded coconut, almond flour, honey, mashed raspberries, and vanilla extract.
  2. Mix until all ingredients are well combined and form a sticky dough.
  3. Refrigerate the mixture for about 10 minutes to make it easier to handle.
  4. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  5. Roll each ball in the additional shredded coconut to coat.
  6. Place the coated balls on a baking sheet lined with parchment paper.
  7. Refrigerate for another 15 minutes to set before serving.
