- Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch ceramic baking dish or large cast-iron skillet with butter.
- In a large bowl, toss the sliced apples with brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract until evenly coated. Spread into the prepared baking dish.
- In a separate bowl, whisk together the rolled oats, flour, brown sugar, chopped pecans, cinnamon, and salt.
- Add chilled butter cubes. Work butter into dry ingredients using fingertips or pastry cutter until crumbly pea-sized clusters form.
- Scatter the streusel clusters evenly across the apple filling, gently pressing large clumps together.
- Bake uncovered for 42 to 48 minutes until the edges are bubbling vigorously and the oat streusel is deep golden brown.
- Let rest for 10 minutes before serving warm with vanilla bean ice cream and a drizzle of salted caramel.
