  • 1 cup fresh basil leaves packed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 medium bell pepper cut into 1-inch pieces (any color)
  • 1 medium red onion cut into 1-inch pieces
  • 1 medium zucchini sliced into rounds

Method
 

  1. In a bowl, combine fresh basil leaves, olive oil, lemon juice, minced garlic, salt, and black pepper; mix well to create the marinade.
  2. Add chicken cubes to the marinade, ensuring they are well coated. Marinate for at least 20 minutes.
  3. Thread the marinated chicken, bell pepper pieces, red onion pieces, and zucchini rounds onto skewers.
  4. Grill skewers over medium heat for about 15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Alternatively, bake in the oven if desired.

Notes
