  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1/4 teaspoon salt
Cheesecake Filling
  • 16 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
Topping
  • 2 cups fresh strawberries sliced
  • 1/4 cup granulated sugar for macerating

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, 1/4 cup sugar, melted butter, and salt. Press the mixture into the bottom of a greased baking dish.
  3. Bake the crust for 10 minutes, then remove from the oven and let cool.
Cheesecake Filling
  1. In another bowl, beat the softened cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
  2. Add eggs one at a time, mixing well after each addition. Stir in sour cream until combined.
  3. Pour the cream cheese mixture over the cooled crust.
  4. Bake for 30-35 minutes or until the center is set and the top is lightly golden.
Serving
  1. While the cheesecake is baking, combine the sliced strawberries, 1/4 cup sugar, and lemon juice in a bowl. Let sit to macerate.
  2. Once the cheesecake is done, let it cool completely at room temperature, then refrigerate for at least 2 hours before serving.
  3. Top the chilled cheesecake with the macerated strawberries before cutting into bars.
