Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, 1/4 cup sugar, melted butter, and salt. Press the mixture into the bottom of a greased baking dish.
- Bake the crust for 10 minutes, then remove from the oven and let cool.
Cheesecake Filling
- In another bowl, beat the softened cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream until combined.
- Pour the cream cheese mixture over the cooled crust.
- Bake for 30-35 minutes or until the center is set and the top is lightly golden.
Serving
- While the cheesecake is baking, combine the sliced strawberries, 1/4 cup sugar, and lemon juice in a bowl. Let sit to macerate.
- Once the cheesecake is done, let it cool completely at room temperature, then refrigerate for at least 2 hours before serving.
- Top the chilled cheesecake with the macerated strawberries before cutting into bars.
