Assembly & Soaking
- Grease a 9x13-inch baking dish with butter. Place half of the cubed brioche bread in an even layer across the bottom.
- In a small bowl, stir melted butter, brown sugar, and ground cinnamon into a thick swirl paste. Dollop half over the bread cubes.
- Add the remaining cubed bread on top, followed by dollops of the remaining cinnamon sugar mixture.
- In a large bowl, whisk eggs, milk, heavy cream, maple syrup, vanilla, nutmeg, and salt until smooth. Pour evenly over the bread cubes.
- Press down gently so all bread absorbs custard. Let rest for 30 minutes, or cover and refrigerate overnight.
Baking & Glazing
- Preheat oven to 350°F (175°C). If refrigerated overnight, let dish sit at room temp for 25 minutes before baking.
- Bake uncovered for 40-45 minutes until golden brown, puffed, and center is set.
- Whisk softened cream cheese, powdered sugar, vanilla, and milk until smooth. Drizzle generously over warm casserole and serve.
