Ingredients
  

  • 2 large flour tortillas
  • 1 cup shredded Monterey Jack and Cheddar cheese blend
  • 1 cup cooked shredded chicken or black beans
  • 1/2 red bell pepper, diced
  • 1/4 onion, diced
  • 2 tbsp fresh cilantro, chopped optional
  • 1/4 cup sour cream for serving

Method
 

  1. Preheat a large skillet over medium heat.
  2. In a bowl, combine the cooked chicken or black beans with the diced red bell pepper, onion, cilantro, salt, and pepper.
  3. Lay one tortilla flat; sprinkle half with cheese and add the filling mixture on top. Fold the tortilla in half.
  4. Cook the quesadilla in the skillet for 3-4 minutes per side until golden brown and crispy.
  5. Remove from the skillet and let cool slightly before using heart-shaped cookie cutters to cut out shapes.
  6. Serve warm with sour cream.
