Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
Cheese Sauce
  • 8 ounces cream cheese
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1/2 cup sour cream

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, chili powder, and cumin.
  3. In a skillet over medium-high heat, add olive oil and sear chicken for 5-7 minutes per side until golden brown.
Cheese Sauce
  1. In a saucepan over low heat, combine cream cheese and milk until melted and smooth. Gradually stir in cheddar cheese until fully incorporated.
  2. Transfer the seared chicken to the baking dish and pour cheese sauce over the top.
  3. Bake for 15 minutes until bubbly and slightly golden.
  4. Serve hot with rice or tortillas.
