  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp lemon zest
  • 1 cup mixed berries (blueberries, raspberries) fresh or frozen
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the yogurt, sugar, vegetable oil, and eggs.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the lemon zest and mixed berries.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the cooled loaf.
