  • 2 medium russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • ½ cup cooked and crumbled bacon bits
  • ¼ cup sour cream
  • 2 tablespoons chopped green onions
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly.
  2. Poke holes in each potato with a fork, place them on a baking sheet, and bake for 45-60 minutes until tender.
  3. Let cool for about 10 minutes. Slice each potato in half lengthwise and scoop out most of the flesh, leaving a quarter-inch thick shell.
  4. Brush the insides with olive oil and season with salt and pepper. Return to the oven for about 10 minutes until crisp.
  5. Fill each skin with shredded cheddar cheese and crumbled bacon, then bake for an additional 5 minutes until the cheese is bubbly.
  6. Top with sour cream and green onions before serving.
