  • 2 lbs baby potatoes
  • 2 ripe avocados
  • 1/2 red onion finely diced
  • 1/2 cup fresh cilantro chopped
  • 1 lemon Juice of
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Boil baby potatoes in salted water until fork-tender, about 12-15 minutes. Drain and cool for 10 minutes.
  2. While cooling, chop the avocados into bite-sized pieces and finely dice the red onion. Chop the cilantro.
  3. In a large bowl, combine the cooled potatoes with avocado, red onion, and cilantro.
  4. Drizzle with olive oil and lemon juice; season with salt and pepper.
  5. Gently toss to combine without mashing the avocado.
  6. Serve immediately or chill briefly before serving.
