Ingredients
  

Brioche & Spiced Pumpkin Custard
  • 1 loaf brioche bread (approx. 14-16 oz), cut into 1-inch cubes
  • 8 large farm eggs, room temperature
  • 1 1/2 cups whole milk
  • 1/2 cup heavy whipping cream
  • 1 cup pure canned pumpkin puree
  • 1/3 cup pure Grade A dark maple syrup
  • 2 tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp fine sea salt
Pecan Streusel Topping
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup raw pecans, coarsely chopped
  • 1/4 cup unbleached all-purpose flour
  • 4 tbsp cold unsalted European butter, cubed
  • 1/2 tsp ground cinnamon

Method
 

Prep & Soak
  1. Grease a 9x13-inch ceramic baking dish. Arrange cubed brioche bread evenly in the dish.
  2. In a large bowl, whisk eggs, milk, cream, pumpkin puree, maple syrup, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  3. Pour custard evenly over brioche cubes, pressing down gently so bread absorbs liquid. Rest 20 minutes (or cover and chill overnight).
Streusel & Bake
  1. Preheat oven to 350°F (175°C). In a small bowl, rub cold butter, brown sugar, chopped pecans, flour, and cinnamon into crumbly streusel.
  2. Scatter streusel over the soaked brioche. Bake uncovered for 38-42 minutes until puffed and golden. Rest 10 minutes, then serve with warm maple syrup.
