Method
Make the Cookies
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
- Add the eggs one at a time, beating well after each addition.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Assemble the Sandwiches
- Once the cookies are completely cooled, take one cookie and scoop a generous amount of softened vanilla ice cream onto the flat side.
- Top with another cookie, flat side down, and gently press together to form a sandwich.
- Repeat with the remaining cookies and ice cream.
- Place the assembled sandwiches in the freezer for at least 30 minutes to firm up before serving.
