Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
Ice Cream Filling
  • 2 cups vanilla ice cream softened

Method
 

Make the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Assemble the Sandwiches
  1. Once the cookies are completely cooled, take one cookie and scoop a generous amount of softened vanilla ice cream onto the flat side.
  2. Top with another cookie, flat side down, and gently press together to form a sandwich.
  3. Repeat with the remaining cookies and ice cream.
  4. Place the assembled sandwiches in the freezer for at least 30 minutes to firm up before serving.
