Ingredients
  

Topping
  • 4 medium ripe tomatoes diced
  • 1 bunch fresh basil chopped
  • 2 cloves garlic minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar optional
  • to taste salt
  • to taste black pepper
Bread
  • 1 loaf ciabatta or baguette sliced

Method
 

Prepare the Topping
  1. In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar (if using), salt, and pepper. Mix well and set aside to marinate for about 10 minutes.
Toast the Bread
  1. Preheat the oven to 400°F (200°C). Place the sliced bread on a baking sheet and toast in the oven for about 5-7 minutes or until golden brown.
Assemble the Bruschetta
  1. Remove the toasted bread from the oven and top each slice generously with the tomato mixture. Serve immediately.

Notes
