Ingredients
  

Topping
  • 4 medium ripe tomatoes diced
  • 1 clove garlic minced
  • 1/4 cup fresh basil chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar optional
  • to taste salt
  • to taste pepper
Bread
  • 1 loaf Italian bread sliced

Method
 

Prepare the topping
  1. In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well and set aside.
Toast the bread
  1. Preheat the oven to 400°F (200°C). Arrange the sliced bread on a baking sheet and toast in the oven for about 5 minutes or until golden brown.
Assemble the bruschetta
  1. Remove the toasted bread from the oven and let it cool slightly. Top each slice with the tomato mixture and serve immediately.

Notes
