Ingredients
  

For the Salmon
  • 4 fillets salmon skinless
  • 1/4 cup BBQ sauce your favorite brand
  • 1 teaspoon olive oil for grilling
For the Bowls
  • 2 cups cooked rice white or brown
  • 2 cups mixed greens spinach, arugula, etc.
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime cut into wedges for serving

Method
 

Prepare the Salmon
  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Grill the salmon for about 6-8 minutes per side, basting with BBQ sauce during the last few minutes of cooking.
Assemble the Bowls
  1. In a serving bowl, add a scoop of cooked rice as the base.
  2. Top with mixed greens, cherry tomatoes, cucumber, red onion, and grilled salmon.
  3. Garnish with fresh cilantro and serve with lime wedges on the side.
