  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice

Method
 

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, mix together the buttermilk, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
